my twice baked meatloaf

and i know, im sorry i dont have a picture. i love blogs with yummy pictures of food, but sometimes i just eat things too fast and it happens, but any way. i make this meatloaf. its like my modern meatloaf. my mother has a lovely meatloaf but its very classic. this one has a modern twist and its amazing. its a combination of other peoples meatloafs that ive seen or read about and i like it. and i called it twice baked, not because you bake it twice, but because i rarely make it, but when i do, i always make it again like a week later cause just once isnt enough. and its got two of everything.

my twice baked meatloaf

get a big ol bowl out and put these ingredients in. right after you heat the oven to 375

quarter cup of chopped fresh parsley
2 shallots
half cup of sundried tomatoes. soak them in olive oil for a day or so. then chop them
2 eggs room temperature beaten
half cup of breadcrumbs
2 cloves chopped garlic
half cup crumbled feta
salt pepper
2 spoons of milk

mix all this together first. then add yur meat. a pound of anything really. ive used a pound of ground turkey to keep it really lean. bison is great too mixed with some beef or pork. just mix the meat in and then put into a pan lined with some cooking spray and throw in the oven for 45 minutes. the flavors and the textures in this meatloaf is sooo good. the tomatoes are sweet. the feta is a little salty and the shallots are raw their great but also if you get an onion and caramelize and throw it in you even get a bit of gooeyness in it. you dont need any gravy or ketchup or mustard or anything. its just amazing as is. and twice as good the second time. enjoy.
