vegan for a day

I felt gross when I woke up the other day. After a weekend of indulgences, I felt furry and bloated and yarged out.(like a pirate.) I was up early looking into my fridge. Bread soy milk and jalapenos. Well I made some toast with jam and coffee. Looking through the interwebs caused from confusion about the time of year. almost too late for tomato corn season, little early for squash and pumpkin season. suddenly realize were entering my favorite eating season. freaking apple season. get ready folks cause i get a little jumpy during apple season. im already thinking about homemade apple syrup and apple crostada and apple everything. on a mission for apples, i find this amazing recipe. it was a quinoa and apple salad with a curry dressing and it was actually vegan, and then it hit me. ill be vegan for a day. only a day. cause seriously thats all i think i can stand, but it would definitely go with my deyargment. so here i am, already got some breakfast in me and i was vegan without even trying. thats just all i had to eat. one meal down, only two to go. but is it just going to be me huddling in my kitchen analyzing my food, or will i be able to carrry on my day like im not a deranged vegan for a day. we shall see.

the only real thing i was doing during my daily agenda was yoga, taking back a horrendous dress i bought and, now making this amazing salad. usually most of my day is setting a time that i need to do something, never being able to do said thing in said timeframe and rushing and worrying all day. i decided this would not be one of those days. i had a few extra minutes and decided to give myself some extra time to walk slower and get a vegan mid day snack. simply enough, a strawberry smoothie. enroute to said smoothie i realized i popped up in a farmers market and decided there was no way i could walk past it without utilizing it on my vegan adventure. 15 mintues later 6 dollars gone. i had a handful of macintosh apples, a head of organic celery. some fresh mint and half a dozen shallots. wonderful my salad is almost bought. take back ugly dress, check. smoothie, check. on to the best yoga class ever. fast forward home, six o clock. too early for dinner but not too late for a post yoga boost. and my favorite neighborhood soup, a cup of mulligatawny will always defer me into the local coffee shop and luckily todays soup was my favorite. very delicious, very vegan. but enough snacking, on to the main course and here it is courtesy of martha.

Quinoa and apple salad with curry dressing

1/4 cup raw whole almonds
1 cup of white quinoa
1 tsp honey
1 tbsp shallot
1 tsp curry powder
salt and pepper
2 tbsp fresh lemon juice
1 small macintosh apple cut into wedges
1/4 cup lossely packed mint leaves
1/4 chopped dried currants or cranberries
2 tbsp olive oil

Preheat the oven to 375, spread almonds onto the backing sheet and toast 7 minutes. Let them cool and roughly chop.
Rinse the quinoa and drain. Bring 2 cups of water to a boil, add quinoa. Return to a boil, stir and let it return to a boil. Reduce heat, cover and simmer till tender but still chewy about 15 minutes. Fluff it and let it cool.
Whisk together honey, chopped shallot, curry powder, salt and pepper and lemon. whisk the olive oil very slowly, making the dressing. Add the dressing to the quinoa and stir. Add the cranberries, the crushed nuts, the apples and the mint and toss well. Garnish with mint.

And lemme tell ya, it was easy, it was fun. I didnt have currants so I used cranberries and they were just as good and ya know, its simple and there was no cheese or bacon and in it and I thought it would be boring as hell but it was amazing. And I had leftovers so I threw it in the fridge and had it again, just as good cold, for a little snack today. And so then I woke up this morning and holyshit. i was vegan for a day. and it wasnt a big damn deal. So, im trying again today. And here I am 8pm and I havent eaten any bacon, or butter, except for peanut butter. After all my organic grocery stores and farmers markets, i still had to make a trip down to the nasty bodega to get some Skippy peanut butter. Its the only nut butter Ill eat. And dont judge, everything in moderation right?
